Glucose syrup

Glucose syrup

Glucose syrup is a thick, syrupy syrup made by breaking down starch (often from corn, wheat or potato) into glucose. It is colorless to slightly yellowish and has a mild, sweet taste.

The taste is less pronouncedly sweet than regular sugar, but it does provide a smooth, soft sweetness. Glucose syrup is widely used in sweets, ice cream, pastries and sauces because it prevents crystallization of sugar and provides a soft texture. It is popular in the food industry for its stabilizing and moisture-retaining properties.
