Baking soda is a white, fine powder chemically known as sodium bicarbonate. It is widely used in cooking as a leavening agent and as a household ingredient.

In baking, baking soda reacts with an acid (such as yogurt, lemon or vinegar), creating carbon dioxide and making dough fluffy. It is often used in cookies, cakes and pancakes. Without acid it does not work well as a leavening agent, so it is usually combined with other ingredients.
