Dried vegetables are vegetables from which most of the moisture has been removed to extend shelf life and concentrate flavor. This is done via air drying, freeze drying or heat drying. Examples are dried tomatoes, carrots, onions, peppers and mushrooms. They are often used in soups, sauces, stews or spice mixes and can usually be added after soaking or directly during cooking. Dried vegetables are useful because of their long shelf life and more intense flavor.
