Quinces
Quinces are hard, golden yellow fruits with a strong aroma and slightly woolly skin when fresh. In raw form they are very firm and astringent, but when cooked they soften and develop a sweet, floral flavor with notes of apple and pear. Quinces are therefore usually not eaten raw, but used in jam, jelly, compote and desserts. They are popular in traditional cuisines and are known for their fragrant and rich taste after preparation.
