De smaak is minder uitgesproken zoet dan gewone suiker, maar het geeft wel een gladde, zachte zoetheid. Glucosestroop wordt veel gebruikt in snoep, ijs, gebak en sauzen omdat het kristallisatie van suiker voorkomt en zorgt voor een zachte textuur. Het is populair in de voedingsindustrie vanwege zijn stabiliserende en vochtvasthoudende eigenschappen.
