Choose a hob with the correct diameter for your pans to prevent energy loss. Never heat enamel pans without contents (water, oil, butter) and ensure that the liquid never completely evaporates. This can lead to overheating and damage to your pan. The recommended maximum temperature for cooking and frying is 220 °C. Cook with less heat than usual. Enamel conducts heat quickly in the bottom and walls. Your dishes will be cooked gently, retaining nutrients and improving the taste experience. Moreover, this way you prevent the risk of burning, reduce energy consumption, and extend the lifespan of the pans. Reduce the temperature in time, taking the cooking process into account. When cooking with hot oil/fat, there is a risk of ignition. Do not leave small children unattended near stoves and hot pans. Always grasp handles and lids with a dry cloth. The core is made of iron and heats up quickly. Most of our products have enamel handles and lids and can also be used in the oven. Enamel is very hard. However, the impact of hard objects on the base, hard knocks, or forceful taps with metal kitchen utensils against the rim can lead to cracking of the glass surface. If, despite all care, the paint layer on the outside peels off, this is only visually disturbing. You can still prepare your dishes with the product. If the enamel peels off on the inside, we advise you to replace the product as optimal hygiene is no longer guaranteed. Maintenance The glass surface of enamel not only inhibits bacteria but is also very easy to clean. Riess pans are suitable for the dishwasher; a light glass program gives the best result. However, we recommend washing the pans by hand for long-lasting radiant shine. Manual cleaning Fill the pan with water while it is still warm after cooking and emptying. After only a short time, softened food residues can be effortlessly removed. Extremely stubborn or burnt food residues can be cleaned with boiling water and dish soap. Then clean with the smooth side of a sponge or a soft brush. Cleaning with the dishwasher Remove food residues or burnt food (see ‘Manual cleaning’) and rinse the pan with warm water before placing it in the dishwasher. Use your dishwasher's light glass program. Cleaning products and tools We recommend cleaning with a mild abrasive and soft sponges or soft brushes. Avoid using hard tools such as steel brushes, steel wool, sand-based abrasives, and sponges with ceramic particles. These can leave scratches on the surface. If the surface shows scratches due to the use of incorrect cleaning agents or tools, the shine of the pan will diminish. However, the pan can still be used without problems. Black spots or gray streaks often come from stainless steel cutlery and can be effortlessly removed with a mild abrasive or Riess's special enamel cleaning agent. Correct storage Store enamel pans well dry, just like glass. Water stains can be effortlessly removed with vinegar water. Overheating can even deform the base of a heavy pot and pan. Adhere to the hob's user instructions regarding the power of the switching stages (Watt). Here are some guidelines: Boiling water at 100 °C = 500 Watt Frying at 180 °C = approx. 1,700 Watt Ensure that the diameter of the pan and hob match as much as possible. Always start with a low heat output and gradually increase to the desired power. NEVER use the boost function (with the exception of large quantities of liquid from 6 liters). Constantly monitor the cooking process. The automatic shut-off by means of temperature sensors often does not react quickly enough in case of overheating.
